CURIOUS ABOUT THE TREND OF PLANT-BASED EATING?
Join the Elk River Area Food Co-op and Alyssa Johnson as we discuss the major health benefits of plant-based foods as well as practical tips to incorporate this healthy lifestyle change into your busy schedule. Whether you want to completely convert to a plant-based diet or would simply like to add some new, fresh recipes to your repertoire, this is an opportunity to explore the diversity of Minnesota plants and their seasonality. We will discover that though this way of eating is simple, it does not have to be boring, difficult or unpalatable. You may be suprised by the delicious, satisfying and nutritionally dense foods you've never heard of or tasted.
There will be recipes provided and plenty of foods to taste, along with time to ask all your food questions!

Alyssa Johnson is the Marketing and Outreach Coordinator of the Elk River Area Food Co-op. She is beyond passionate about fresh, local food and wants to make healthy choices easy and accessible (vs. overwhelming and confussing). She was an Interpreter at the Oliver Kelley Farm in the state of the art Learning Kitchen. Alyssa's role was to spark a bit of curiousity in teaching visitors about farm-to-fork concepts and the importance of understanding where our food comes from; the ground, not the grocery store. Alyssa believes that food is the key to connecting communities and is excited to share the abundance of options plant-based eating provides.
